For those who don't know, Mckenna is my cousin on my mom's side. She is the only other girl cousin I have on my mom's side which you know makes like sisters... :) And you may recognize her from my wedding. After I picked up Mckenna from the airport, we may have gotten a little lost on the way home but after a quick recovery we came back to the house we are staying at (the place I work) and hung out for a bit. We caught up a little and settled in with the cookbooks to plan out our meals for the week. As the grocery list grew we decided that our meal for that night would be one of Mckenna's favorites: stuffed mushrooms, and one of my favorites: bruschetta. After grocery shopping and showing her our apartment we had a relaxing first day of just lounging around the house. We rented a movie and accidentally made some double chocolate chip cookies, oops 58 of them, and maybe ate a lot. The movie we wanted to rent (safeway red box $1 movies don't always have a big selection) was not available and as the line grew behind us we had to make the fast decision of renting My Sister's Keeper. We had both seen the movie and liked the movie though its certainly a heavy one. We still had a great time either way! Bring on the pictures!
The mushrooms were stuffed with: italian sausage, bell pepper, onion, garlic, left over mushroom stems, spinach, bread crumbs, and parmesan cheese.
Painting the mushroom caps with olive oil so they don't burn.
