English muffins






Hi everybody-

sooo these past couple of days have gone by very quickly. Life with out a job feels very weird... I can't keep track of the days and everything sort of runs together. On that note, Wes did find a job (I think I forgot to post that) but I am still searching. Wes got a job just last week working with mentally disabled adults. I am still hoping for a nanny job but have been searching through craigslist for anything else I might see. Anyway, because we have had so much time together we decided that we would try and make eggs benedict together one morning with homemade english muffins. The eggs benedict didn't turn out all that amazing since I completely messed up the hollandaise recipe and neither one of us had ever poached eggs before so they came out a little ... firm ... We will take pictures of our next attempt (whenever that is), hopefully it turns out better. However! The english muffins were quite a fun project and those turned out great! We found a recipe in our trusty bread book and let our bread machine make the dough for us. Then we plopped it out in a nice big-non-sticky-ball, rolled it out easy enough and made 3-inch-round circles. Then all you do is cook them slowly on low heat for about 7-10 minutes on the stovetop and -bam- english muffins. :)  Of course we have pictures to accompany the explanation, posted above and in the wrong order. Saturdays




Hi Friends and Family!  

Wes and I have begun to appreciate the fact that we no longer have to wake up at 7 in the morning to hurry off to a painting class on Saturday mornings. Yes, we are quite thankful to be able to enjoy all that Portland has to offer on Saturdays. For example, a couple of weekends ago when driving down hawthorne one saturday morning we realized that tons and tons of people like to go street shopping on saturdays (imagine that)! After that we made a point of going to breakfast on Hawthorne to enjoy the people watching and beautiful weather that Portland has been having. We had turned out going to breakfast at a little place called Jam on Hawthorne. We absolutely loved it and will no doubt take you there if you get a chance to visit us, anyway, I posted pictures of that with the pictures of our new place. And yesterday, we spent our saturday in our pajamas most of the day, getting things done around the house (and of course reading about Harry). One big thing we accomplished was hanging pictures in the hall and hanging paintings around the house. Above are some pictures of our hall with the frames all in place finally!!! It feels good to finally have wedding pictures up to show off (and also get the clutter off the floor!) ALSO! I want to point out the little secluded section of black-and-white images. Those pictures were given to us from our best friend/up-and-coming photographer, Mr. Justin Wright, for Christmas. They are pictures from all over Sacramento: Streets of London pub, train tracks, k. street, etc... We love having these little glimpses of our hometown on our wall. Again, when you visit you can have a closer look. :) Thanks for being a part of our lives everyone... we deeply appreciate you.

Harry Potter

If you have followed this blog some-what regularly you would know that Harry Potter has become a bit of a hobby for Wes and I. We enjoy reading it together in the mornings when we wake up and in the evenings before bed. We always have tea with it, and I am always the one to read. Yes, I read out loud while Wes sits and listens. We. love. it. Finally we have reached the last and final installment of the Harry Potter series. We are about half way through and have started to wonder what we will do when our down time can no longer be spent following the lives of Harry, Ron and Hermione. We will probably start reading The Lord of The Rings series or something like that but I fear that it just won't be the same. We started the series one innocent evening last quarter while I was doing painting homework. I don't think we had the slightest idea how much we would grow to love reading out loud together or how much we would love the series. We took a couple pictures to document the almost-end of this fun series. Thanks for always listening to me raddle on about the amazing-ness that is Harry Potter. Read them if you haven't, seriously they have been so fun.

A Thank You


We don't do this often but I wanted to send a little shout-out to the Panella's who have been so thoughtful. To my aunt and uncle, Chris and Jerry- Thank you for always sending us holiday cards and for our gift card to Powell's books. We just recently got the chance to spend an afternoon getting lost in the huge bookstore for a good 3 hours. We purchased several books and we wanted to say Thank you! Also, to my Dad- Wes says thanks for the tip off about the Bourne Identity books. He has started reading them and is enjoying them. 

Thanks for all the people who show us how much they love us. It means a lot to know that we are thought of even when we are miles and miles away. :) We love you guys!

My apologies for the lack of blog-action this past week. It has certainly been a busy time though I know it sounds unbelievable when neither of us have jobs and we are only taking two classes each. But here is the latest in the life of Katie and Wes:

- We had an amazing weekend celebrating Valentines day (our nine months of being married) and relaxing after midterms were completed. 

- We are both still searching for jobs. However Wes had an interview last week and we are hopeful for that! 

- We recently finished book 6 of Harry Potter and started the 7th this morning. Can't wait for the movie coming out in July!

- We have been cooking up a storm. We are back into the habit of making bread at home which has been sooo yummy, also we tried a new chocolate cookie recipe we saw in The Oregonian maybe I will post the recipe, they turned out amazing! 

-We are excited to have dinner with cousin Caleb and his girlfriend this week. 

-We purchased a coffee table off craigslist to put in the living room. Wes will now have a place to put his tea while we read (I tend to hog the end-table side of the couch.) :) 

- We are anxiously anticipating a busy march/April with Ashley & Marisa, My family, and Sue & Greg visiting. 

- The weather has been gorgeous here. Temperature in the 50's-60's and hardly any rain.

You Know You've Got Mid-Terms When...



- You have been studying at a coffee shop for 9 hours.
- And you are so bored that you start taking pictures of your coffee with your photo booth (comic book style).
- And you have to suppress giggles at the sight of an old woman sitting across from you, enjoying her scone so much that she is eating with her eyes shut. (I am trying not to laugh as we speak)

So you've seen our Kitchen. Now, we are finally able to show you the rest of our new place. On Friday we invited our friends Mark and Emily over for dinner and for this reason we finally finished cleaning and took pictures of our place in it's entirety. The only thing really left to do is put a way a little surface clutter and hang up pictures and paintings on the walls. We love the high ceilings, wood floors, and spacious living room area. Can't wait to have some of you visit and see for yourselves the upgrade from our last place. Love you!

Palios


I think it is fair to say that our presence at Palios has been recognized. Within the last two weeks we have received three pieces of free cake and two free cookies. Always delivered to us with out any suspicion on our part. We are both always blown away. I wonder if the owner secretly loves how excited I get at the look of a towering piece of german-chocolate cake. It seriously makes my day. :) Today was just such a day as a piece of cake was set stealthily by my side with two forks. Later we get a glimpse of the owner and he asks us, "what would you guys like for Valentine's Day?" With a smile on his face... Wish you could be enjoying this yummy free cake with us.
